TK Club Members’ Favourite Recipes
Each month I share with you a favorite recipe here in my TK Club.
This month it’s Johnny Cake.
Johnny Cake
Ingredients
2 cups self-raising flour
½ cup raisins
¼ teaspoon salt
1 tablespoon sugar
¼ cup water
Method
In a bowl, combine the flour, raisins, salt, and sugar.
Add water gradually so the dough is easy to work until it resembles a large scone.
NB You don’t want to have the dough too dry or too sticky.
Add a little more water if too dry or add a little more flour if too sticky.
A mate of mine from the Territory made this mouthwatering recipe for me recently.
I had to share it with you because it is SO simple.
Make sure you have some nice hot coals to the side of your fire for your camp oven to sit on and put a shovel full of hot coals on the lid.
This recipe is best for camp oven cooking around a campfire. However, I am sure you could try it in a cake tin in the oven.
Cooking time is approx 25 minutes.
Serve with butter and golden syrup.
